Sorella: Hibiscus + Mint Sweet Chilli
We've teamed up with our unitmates Nania's Wildbrew to bring you this sweet n minty sauce, great for dipping and drizzling over pretty much anything! What's in it: we used barrel-aged kombucha vinegar, roasted peppers, hibiscus flowers, fresh mint, and a dash of our fermented aji limon chilli mash for heat and a citrus note. The sweetness is provided by a mix of brown and palm sugar, giving a soft and buttery tone that pairs well with the tart hibiscus. Behind the name: As well as "sorrel" being another common name for hibiscus, "sorella" is Italian for sisters - James (who runs Nania's) has Italian heritage, as well as two daughters (sisters!). Sometimes these things name themselves.
