Plucked from the foothills of the Himalayas in mid-spring—a few weeks after first flush harvest—the small leaves are rolled, fully oxidized and baked before a careful final sorting by hand. Translating to Eagle’s Cliff, Giddapahar is the only estate in Darjeeling that has been under Indian ownership since its founding in 1888, and is still owned by the same family. The fourth generation now heads up production, living on the farm year-round. Its rocky soil and rugged terrain—with elevations up to about 5,000 feet—mean challenging conditions for the plants, which yields more flavorful tea in the cup.
