(it does.). appley sweetness. a whisper of cocoa. a mouthfeel so soft you'll wonder what you were doing drinking mediocre decaf all these years. over the moon is everything you want from a morning cup — complex, fruity, seriously delicious™ — just without the buzz. all of the excitement. none of the noise. this is our second microlot LTO release, and we didn't hold back. sourced from the mountains surrounding Jinotega, Nicaragua — some of these beans are grown nearly a mile high — and harvested by a remarkable group of farmers called Gold Mountain Coffee Growers (GMCG). every cherry is hand-picked at peak ripeness. then comes carbonic maceration fermentation, a process that transforms the bean's flavor profile in ways that can't be rushed. GMCG lets it run anywhere from 5 to 10 days, stopping only at exactly the right moment. worth every single one of them. the bean itself is a blend of five varieties — Catuaí, Caturra, Pacas, Pache, and Yellow Bourbon — each sorted mechanically and by hand before being naturally decaffeinated using the Swiss Water method. no chemicals. no shortcuts. just water, time, and people who care deeply about what ends up in your cup. and when these beans reach our roaster, they get the same unhurried treatment. small-batch, gently roasted to let the origin do the talking.
