70% bitter and bittersweet apples from Brittany (Dous Moën, Marie Ménard, Douce Coëtligné and Kermerrien) blended with 30% of eating apples (Granny Smith and Gold Rush) from the Gard. The apples come from organically farmed orchards. Aged on lees for 9 months, it has perfectly balanced bittersweetness & lemon-y dry finish.
