Made predominantly from Sauvignon with a small proportion of Chardonnay, sourced from the Langegg and Czamillonberg sites. Built on ripe, healthy grapes grown on bare, poor soils, the destemmed grapes ferment for two to five weeks in a large wooden cask on the skins. The result is Tscheppe's most structured and complex wine - deep, smoky and endlessly layered. Working from a corner of his brother Ewald's cellar, he tends small parcels across several sites, crafting only white wines from Sauvignon, Chardonnay and two Muskatellers - some pressed, some skin-contact, all aged for extended periods in barrel. Farming is biodynamic, with the vitality of soil and ecosystem at the heart of everything; his vineyards are alive with flowers and insects, harvested entirely by hand with selection beginning among the vines to keep yields naturally low.
