Crafting their spirits in the historic terroir of San Baltazar Chichicapam, Oaxaca, this duo is celebrated for preserving ancestral techniques while bringing a singular, impeccable clarity to their batches. This specific release is an Elote spirit, a brilliant showcase of a classic Oaxacan culinary and distilling tradition. To create it, Alejandrina and Nicolás first roast, crush, and ferment mature Espadín agave (Agave angustifolia). During the crucial second distillation in their traditional copper alembic still, they suspend locally harvested, roasted heirloom corn (elote) inside the still. As the spirit vapors pass through the corn, they absorb the sweet, savory, and grain-forward oils of the kernels. This process beautifully marries the crisp, smoky complexity of wild-fermented agave with the rich, comforting essence of traditional Oaxacan maize.
