100% Pelaverga Piccolo VINIFICATION The harvest is done by hand to preserve the integrity of the fruit and, if necessary, allow for a selection of the grapes, which are then transported to the winery in 20-kg crates. The bunches are destemmed, and the must is transferred by gravity into open French oak vats and open stainless steel tanks where alcoholic fermentation takes place. During maceration, gentle pumping over and punching down are performed daily. Malolactic fermentation takes place in stainless steel tanks and the wine ages in large French oak barrels. Bottling typically takes place between late August and early September of the year following the harvest. Optimal serving temperature between 16 and 18°.
