K Sabatier 12" Chef Knife Ideal Pattern Carbon Steel Walnut Thiers 1950s 60s

Vintage K Sabatier carbon steel 12" chef knife with very full carbon steel blade, walnut or fruitwood handle scales with an old K Sabatier foil stamp and brass rivets. Handle had a missing piece on the side opposite mark and has been repaired with an epoxy putty, it is a good color match but does have a different texture. This French pattern, the Ideal pattern was invented in the 1920s but became very popular post WW2 becoming the quitessential French chef knife pattern.
