Growing mainly JARC 74110 & 74112, his entire operation is overseen by him & his family. We were incredibly fortunate to come across Ayel’s coffee in 2024, through TRACON & 2nd Mile. 3 years later, we’re in awe how the coffees have continually improved & we look forward to what the future will hold for Ayel. THE PROCESS Ripe cherries are sorted & spread on raised beds for drying. During fermentation, natural sugars and fruit flavours are essential for creating the characteristic sweetness and density of natural coffees. Smallholder farmers like Ayel only have enough resources to process natural coffees, yet their advantage is the meticulous approach they take to this process, through constant turning of the drying cherries. WHY WE CHOSE THIS COFFEE It is our dream to source coffees directly from smallholder farmers in Ethiopia, offering a distinct perspective on taste compared to blended coffees. Ayel’s coffee has evolved over the years, this time showcasing a juicy complexion like apricots & strawberries whilst retaining the refreshing complexity of lemon tea.
