Christmas Naturally Cured Ribs

We cure the rack of ribs naturally, then marinade them in our Christmas cure prior to smoking them in our heritage smoke houses. Use them as a trivet, cook with beans or even better still add them to your potatoes as you roast them! The potatoes will absorb the flavours from the ribs as they cook.
