This is because the butchery takes the entire side of the steer and butchers it to then equally divide all of the cuts to both customers that bought a 1/4. This way nobody is stuck with just a front or hind 1/4. We then put the steer into your name!! We'll have our expert butcher call you directly to go over your preferences and process your beef. They will call you to pickup approx 2-3 weeks after slaughter.
