VARIETY: 74-110 & 74-165 NOTES: Dates, Figs, Molasses This Ethiopia Shantawene coffee comes from the mountainous Sidama region of Southern Ethiopia. Naturally processed and dried on raised beds, this lot offers a rich, fruit-forward profile with notes of dates, figs, and molasses. The Region Shantawene sits near the base of Bombe Mountain in Sidama, one of Ethiopia's most recognized specialty coffee regions. With elevations reaching 2,200 meters, the area's high altitude and cooler growing conditions allow coffee cherries to develop slowly, contributing to the complexity and sweetness Sidama coffees are known for. The Washing Station The Shantawene Washing Station works with smallholder farmers from the nearby villages of Shantawene and Bombe. The station pays premiums for high-quality, freshly harvested cherries, encouraging careful picking and selection. Because the farms are located close to the station, cherries can be delivered quickly after harvest. The Varieties This lot contains two Ethiopian varieties developed through the country's coffee research programs: 74-110 - An Ethiopian selection known for its adaptability to local growing conditions. 74-165 - Another Ethiopian selection grown in the region, contributing to the diversity of Sidama's coffee production. The Process Once delivered to Shantawene, the cherries are evaluated for color, ripeness, and density before undergoing flotation to remove defects. The selected cherries are then spread across raised beds and regularly rotated to promote even drying. Once they reach the ideal moisture level, the coffee is prepared for export. The Flavor Profile Aroma: Rich dried fruit with a deep, molasses-like sweetness. First Sip: Sweet dates and figs with a concentrated fruit character. Body: Full and syrupy with a rounded sweetness.
