Learn how enrichment affects structure and fermentation while mastering more advanced shaping techniques. Projects: Maple Pecan Sticky Buns Brioche Students prepare a soft, silky brioche dough and transform it into decadent sticky buns—perfect rolls with caramelized toppings. What Students Take Away A strong foundation in bread-making theory and methodology Skills in kneading, shaping, scoring, fermentation control, and baking Confidence to recreate every bread at home All breads made in class, packaged to take home Session 1 – Oct 12th | 11:00 AM – 3:00 PM: Quick Breads Session 2 – Oct 13th | 11:00 AM – 3:00 PM: Flatbreads Session 3 – Oct 14th | 11:00 AM – 3:00 PM: Artisan Breads Session 4 – Oct 15th | 11:00 AM – 3:00 PM: Enriched Breads Session 5 – Oct 16th | 11:00 AM – 3:00 PM:Mix Ins & Whole Grains Ages 14+up This program may be taken as a complete 5-week series for the full bread-baking experience, or students may enroll in individual weekly classes based on their interests. Each session is designed as a standalone, hands-on workshop while also building skills that progress naturally throughout the series. Open to students ages 14 and older, this program is ideal for enthusiastic beginners, experienced home bakers, and anyone ready to deepen their knowledge of artisanal breadmaking. NY Cake Academy classes are held in our Manhattan flagship at 118 W 22nd St. All supplies and materials included, but if you require any special accomodations please don't hesitate to contact us at custom@nycakeacademy.com. Our classes are hands-on, interactive experiences. So, please dress accordingly. We recommend wearing casual clothing that you won’t mind getting a little sugar on, and flat comfortable shoes. Open toed shoes and sandals are not recommended as this is a safety concern when working within a kitchen. Long hair should be tied back.
