Raw Tom (7 Month Aged) – 1kg Portion

We have a rare, very limited version of our Raw Tom to share with you. This batch has been aged well beyond its usual 4 to 5 months and is available in 1kg quarter wheel portions only. Raw Tom is normally released young, fresh and lively, with a gentle acidity, yoghurt-like tang, and subtle barnyard and mushroom notes near the rind. This particular batch caught our attention early, showing unusual depth and promise at 4 months, so we decided to let it age on. At just over 7 months, it has done something special. Rather than drying out, it has held its moisture beautifully while deepening in flavour. The familiar yoghurt brightness is still there, but now layered with savoury umami, burnt butter richness and a long, unfolding finish that keeps unfolding flavour as it lingers in your mouth. Oxymoron is our signature dark pale ale. Or is it a pale ale disguised as a dark? Either way, it straddles the gulf between pale and dark and is every bit as intriguing as it sounds, with spicy rye notes meeting pungent, fruit-driven hop aromas. It is a brilliant match for harder cheeses, and pairs especially well with the savoury depth, burnt butter richness and lingering umami of this older Raw Tom.
