The beans are brought from growers in dry parchment, and are later milled at Popayan and transported to Caldas to be decaffeinated. During this unique decaffeination process, which was developed in Colombia, the caffeine is extracted from the bean using sugar cane and water, which brings out the natural sweetness while maintaining the coffee's attributes.
