Mexico El Triunfo
Grown between 1,000-1,800 meters above sea level in Chiapas, Mexico, this coffee comes from the CESMACH Women’s Producer Program, a program within the CESMACH (Campesinos Ecológicos de la Sierra Madre de Chiapas) Cooperative. The CESMACH Women’s Producer program was started in 2011 and was a massive step toward increased empowerment for women. Coffees from this program are bought at a premium that is paid directly to women producers and has been able to fund construction of vegetable gardens and women’s health programs. These coffee cherries were carefully hand-picked, depulped, given a 12-18 hour fermentation to remove the mucilage, and slowly dried to preserve the complex fruity, floral, and balanced flavors that are a result of high-grown Mexican coffee.
