Mie Matcha Suigetsu

Suigetsu (水月) is a first-harvest tea powder from Mie. Strictly speaking it is a gyokuro powder rather than a matcha, and it is used in exactly the same way — the difference shows up as an unusually concentrated umami. Rich umami and sweetness carry a nutty fragrance, with just enough bitterness to give the cup balance. It is a refined bitterness rather than a harsh one, and the finish stays mellow long after the last sip. The colour is a clean, bright green.
