When the opportunity arose to take over an estate in Antioquia with its own independent mill, Leo and his wife Jenny, Pergamino's Head of Quality Control, eagerly accepted. They renamed the property Finca El Jardín in honour of the ancient Greek philosopher Epicurus, reflecting their vision for the farm as a collaborative space where knowledge is freely shared. Drawing on his background in fermentation science, Leo uses the property to experiment with rare plants like this resilient Chiroso lot, an Ethiopian landrace variety that thrives in the local climate. By testing progressive cultivation and processing techniques on their own land, Leo and Jenny are able to pass their firsthand insights directly to a broader network of local producers, helping the entire community elevate their harvests.
