Most producers here make a good white and then make a "reserve" by putting it in new oak. Josep Serra went the other way — no barrel, no tank, just clay and thirty months of patience. The Cuvée is the top of his range and the least interventionist wine in it, which is not usually how that works. The Taste Thirty months in clay doesn't make it heavy — it makes it wide. Almond blossom and white orchard fruit up front, dried Mediterranean herbs behind, and the savoury, faintly bruised note that only long lees contact gives. Ample and balanced across the palate, still very fresh at the finish, closing on the clean bitter edge white Garnacha always has and most winemakers polish out. Serra left it in. Best Enjoyed With Serve at 10–12°C and give it air — this is not a fridge-cold wine. Grilled artichokes, salt cod, aged Manchego, roast chicken, a whole fish with too much olive oil. A wine for the table, not the patio. The Story Josep Serra is a fourth-generation grower from the Ribera d'Ebre who spent two decades running the technical side of other people's wineries before starting his own. In 2001 he bought three hectares of very old vines in the upper Capçanes district of Montsant; the family label, Serra i Barceló, followed in 2009. Terra Alta came in 2013, for one reason: to read white Garnacha on limestone. He farms nine hectares of it — limestone, clay and a quaternary fossil dune the locals call pandl — with minimal intervention and the estate's own native microbiota. Serra is also the advising winemaker at Vinyes del Terrer in Tarragona. If Blanc del Terrer is a wine you know, you already know his hand: it's a different grape on different ground, but the same instinct for texture, lees and restraint. Taste them side by side and the signature is unmistakable. Across the Range The Cuvée and the Aucalà Blanco are the same grape off the same limestone. The difference is time and vessel: the Blanco spends 8 months in stainless steel, the Cuvée 30 months in clay amphorae. Both are built on the same perpetual-lees method — each vintage fed with the lees of the ones before it, closer to how a solera behaves than a modern white cellar.
