White Flowers Bergamot Lemongrass Peach Honey The Producer Yadimir Quiguanas Pérez is a first-generation specialty coffee producer originally from Putumayo. His work in coffee began when, at only 15 years old, he took responsibility for his family’s farm after his father became unable to continue managing it. Following displacement caused by Colombia’s armed conflict, Yadimir rebuilt his life in Pitalito, Huila, and gradually turned coffee from an unfamiliar livelihood into a long-term family project. His approach is centred on continuous learning, careful variety selection, and increasingly precise fermentation and drying. Yadimir’s coffees have gained recognition well beyond the farm: one of his lots was used in Colombia’s first Barismo Master Championship in 2023, while internationally respected roasters have released his Bourbon Ají and Ombligón coffees. The Rare Variety Chiroso is a rare Colombian coffee distinguished by its elongated fruit and seed. It first became famous through exceptional competition coffees from Urrao, Antioquia, and was initially assumed to be a mutation of Caturra. More recent genetic work has challenged that explanation: research on the Chiroso group found Caturra Chiroso to be genetically separate from conventional Caturra and connected instead to Ethiopian landrace material. This unusual background helps explain why Chiroso can combine jasmine-like florals and bright citrus with greater sweetness and body than many delicate floral varieties. In a clean washed process, its profile can move from bergamot and lemongrass toward peach, apricot, honey, and soft herbal complexity, supported by an exceptionally silky mouthfeel. Processing Method Rather than relying on fruit infusion or a heavily process-driven profile, washed processing is used to present the variety and growing conditions with greater clarity: Removal of the surrounding fruit followed by washing before the coffee is fully stabilised and prepared for export A cleaner, more transparent expression than a natural or co-fermented process No added fruit, flavouring, or co-fermentation is stated for this lot Public profiles of Yadimir describe double fermentation as part of his broader specialty-coffee practice. The Farm Finca Los Yarumos was established in 2014 in the village of Castilla, within the Criollo district of Pitalito. The approximately three-hectare farm sits at around 1,740 metres above sea level, overlooking the Laboyos Valley. Its principal harvest periods are April to June and September to November. Los Yarumos began as a traditional coffee farm planted largely with familiar Colombian varieties. Over time, Yadimir shifted its focus toward differentiated, high-quality microlots, renovating parts of the farm with varieties including Pink Bourbon, Bourbon Ají, Ombligón, Pacamara, and Caturra Chiroso. The farm is now an expression of resilience, experimentation, and the ambition of a new generation of Colombian producers.
