A cross of Amur (Acipenser schrenckii) and Kaluga (Huso dauricus) sturgeon, it delivers large firm pearls above 3.0mm with a mellow buttery character and a gentle nutty finish. Cured lightly in the malossol tradition at 3.5% salt. No harmful additives, just salt. We are a second generation caviar house. Our roe travels direct from farm to Australia with no middle people, and every order is packed in isothermal packaging so the cold chain holds from our fridge to your door. Our sturgeon are raised in sustainable aquaculture farms across the globe, primarily in China, Belgium and Italy. CITES certification stands behind every tin.
