Varieties: Chardonnay Harvest date: 3rd and 7th March 2025 Yield: 1kg per vine / 1.2 tonnes per acre Fermented: Whole bunch pressed and fermented with wild yeasts in French oak. Maturation: 10 months in French oak with 25% new Alcohol: 12.6% Bottling date: Feb 2025; bottled without fining. Production: 100 cases.
