The Atosa PCG9-NG is a 15 3/4 inch wide floor model gas pasta cooker with a single 9 gallon tank, built for an Italian line, a pizzeria, or any kitchen that cooks pasta to order through a full service. It ships set up for natural gas, runs a single 46,000 BTU/hr burner under the tank, and comes with four baskets in the box so you can drop two portions of different shapes at once instead of waiting on a single pot. The cabinet is stainless steel inside and out on 4 to 6 inch adjustable legs, and the gas connection is a 3/4 inch MIP fitting at the rear. 9 Gallon SUS316 Deep-Drawn Tank The tank is SUS316 stainless steel, a grade with more corrosion resistance than the 304 used on most cabinets, which matters when the water sits salted and near boiling all day. It is deep drawn from a single sheet, sandblasted and electropolished so starch releases instead of baking on, and welded to the top rather than set into a gasket, so there is no seam for water to work under. Tank depth is 8 inches, and the 1 inch NPT drain valve empties it fast at close. Four Baskets and 1/3 Plus 1/6 Portioning You get two 1/3 size baskets, one 1/6 size left basket, and one 1/6 size right basket as standard, so the 9 gallon tank can run two full portions or split into smaller drops for half orders and sides. Extra 1/3 baskets (part R06018000023) and 1/6 left and right baskets (R06018000024 and R06018000025) are available if your menu leans toward many small portions at once. Manual Knob Control with Piezo Ignition A manual knob sets the flame height directly, so the cook can bring the tank to a rolling boil for the first drop and back it down to hold temperature between orders without cycling a thermostat. Piezoelectric ignition lights the burner without a match or a standing pilot, and a high-limit safety shut-off cuts gas if the tank overheats. Natural gas manifold pressure is 4 inches W.C. with the supplied regulator. Water Fill, Drain and Clearances Water fills manually through an inlet pipe and valve on the unit, connected by a 3/4 inch MNPT fitting, and drains through the 1 inch outlet, so you tie it into hot water and a floor drain the same way you would a kettle. Allow 6 inches to combustible walls at the sides and rear; against non-combustible surfaces it can sit flush.
