Origin: Buesaco, Nariño, Colombia Producer: Huver Castillo Process: Honey Flavor Profile: Fruity + Bright Tasting Notes: Blue Raspberry, Fruit Punch, Vanilla Huver Castillo represents the third generation of coffee growers in his family. A former math teacher, Huver has worked with his father on their three family farms, including El Paseo, which has been in his family for over 20 years. El Paseo is situated on the slopes overlooking the valley of the nearby town Buesaco, in the southeastern part of Colombia. He now runs the farms himself, producing excellent coffees with technical expertise and extreme care. After sorting to ensure the highest quality, this coffee starts with a 48-hour pre-fermentation in the cherry. It is then dried, depulped, and washed. During this stage the by-products are collected and used to create a mosto, a fermentation dough that also includes crushed berry pulp that has been fermented for 48 hours. This mosto is combined with the beans in stainless steel tanks for 10 days of anaerobic fermentation. Finally, the coffee is sun dried on patios for 10 to 20 days, following a 30 day stabilization period that allows the flavors to mature before export. This process intensifies the coffee’s natural fruitiness, while creating the perfect balance of sweetness and acidity.
