Selles-sur-Cher
About the Cheese This exquisite soft goat’s milk cheese from the Loire Valley is one of France’s most beloved regional treasures. With PDO (Protected Designation of Origin) status, it reflects generations of traditional cheesemaking. Made with raw goat’s milk, the cheese begins life as crumbly, fresh and citrussy, but with age it develops a creamy, dense paste and deep herby complexity. The best examples, like this one, are made artisanally, not industrially, ensuring a true taste of terroir in every bite. A Loire white or rosé is its natural companion, though any crisp white wine will make a fine match. About the Cheesemaker Fromagerie P. Jacquin & Fils is a family-run business rooted in the heart of the Loire Valley. They work with around sixty small and medium-scale dairy farms, all within a 50 km radius, to source exceptional quality milk. The goats, mostly Alpine and Saanen breeds, are raised with a strong focus on welfare, enjoying well-ventilated housing, massage brushes, and tailored local diets. Jacquin’s close relationships with these producers, some stretching back generations, ensure a steady supply of premium milk for both their farmhouse and artisan cheeses. Their commitment to sustainability, traditional methods, and animal welfare results in cheeses that are rich in flavour and true to their heritage.
