About the beef The cattle this comes from live on open grassland in the Free State, eating the grass that's there. No grain finishing, no feedlots. The meat is darker than what you'll find at the supermarket and the flavour is fuller — that's what grass-fed beef tastes like. How to cook it Pasture-raised beef takes a little longer to break down than grain-finished beef, but the broth ends up richer and the meat falls apart on the fork. Brown the cubes first, then add stock or wine, cover, and give it three hours on low. Don't rush it. Serve over pap, rice, or mashed potato. Storage Keeps in the fridge for up to 3 days. Freezes well — use within 6 months.
