It describes what cacao farmers do when they read a pod and know it is ready. It describes what Indigenous harvesters of Australian native botanicals do when they move through Country with knowledge carried across generations. It describes what happens when those two traditions meet in a single bar. Ruby chocolate needs no colouring. No flavouring. The pink is already there, held inside the cacao bean itself, waiting to be released. That is Gwimarra too - finding what was always there. Gamalang, the Native Raspberry, brings a bright, clean berry note. Mourao, the Mountain Pepperberry, follows with warmth and a subtle, spiced finish that builds slowly and stays.
