Master Shin - Sashimi Kitchen Knife
A hand-forged and hand-hammered carbon steel knife made in South Korea following old-world techniques and featuring a traditional minimalistic design - high quality, functional and a true work of art. This sashimi knife can be used for the traditional preparation of fish but also does a great job very thinly slicing fruit and vegetables. The knive undergoes water treatment to enhance the cutting power and longevity compared to oil. The blade hardness should be approximately 57-62 degrees. While high-end knives often exceed 60 degrees, a Master Shin knife focuses on achieving a balance between strength and flexibility. Exceeding 60 degrees can lead to blade breakage. Handling & care: Do not cut frozen food Sharpen with wet stone not sharpening steel Do not use on very hard surfaces, wooden cutting boards are good Do not put into dishwasher If knife gets stuck while using, pull it out vertically and not side-ways When cared for properly, the knife will serve you well for decades to come
