The process begins with meticulously selected ripe cherries that undergo an initial oxidation phase, followed by partial drying and then a rehydration step to reactivate microbial activity before a prolonged 120-hour fermentation, ultimately finished with careful drying and stabilization. The result is a cup that bridges precision and intensity—bursting with florals like honeysuckle and hibiscus alongside ripe stone fruit and citrus, all carried by a clean structure but amplified sweetness and aromatic saturation that far exceed a classic washed profile.
