Known alternatively in Chinese as mi gao tong 米糕筒 (literally "rice cake tube"), these containers are commonly used in Taiwan as molds for tong zi mi gao 筒仔米糕 (aka tâng-á-bí-ko in Taiwanese), a savory sticky rice dish flavored with shiitake mushroom, pork, and fried shallot. Pack your ingredients into a ramekin, pop it in the Tatung, then turn it out onto a plate once it’s done steaming. Though these were originally designed for mi gao, they can be used for many other things.
