Grape: Verdicchio Country: Italy Region: Le Marche Farming: Biodynamic Passolento embodies the intensity and structure that a mature Verdicchio can provide. It also speaks of the patience required in the vinification and aging of this wine. It ferments and ages slowly in 10 hl Slavonian oak vats before some further time in bottle. A silky texture with hints of fennel and a slight bruised apple quality. A great white for richer dishes.
