Dinkelmehl Type 630 wird aus reinem Ur-Dinkel der Sorte Oberkulmer Rotkorn hergestellt. Es wird verarbeitet wie Weizenmehl. Der Eiweißanteil ist erhöht, sein Eiweiß bildet aber ein weicheres Teiggerüst. Die Gebäcke sind intensiver im Geschmack, es wird eine bessere Verträglichkeit beobachtet.
