Located on the slopes of the Turrialba volcano in Costa Rica, Aquiares Estate is the largest coffee farm in the country and home to a community of roughly 1,800 people. Its name, meaning "land between rivers" in the Huetar indigenous language, reflects the farm's deep local roots, dating back to its founding in 1890. Today the farm is run by Diego Robelo, who has continued his father Alfonso's work building Aquiares into an integrated, sustainability-focused community, with a strong emphasis on carbon neutrality and biodiversity preservation. This lot highlights the Entre Ríos variety, a cross of Marsellesa and Red Obatá (both Timor Hybrid x Villa Sarchi), producing a singular, delicate cup. Ripe cherries are selectively harvested and mechanically depulped using a Penagos DCV 306 system, removing the pulp and part of the mucilage. The coffee then undergoes combined mechanical washing and partial fermentation for controlled mucilage breakdown and cup clarity, before drying in a Guardiola system for approximately 32 hours at 45–55°C.
