In the mountainous Bella Vista region of Chiapas, Mexico, coffee farming has been part of family life for generations. For many women, however, it is more than a tradition—it is a daily responsibility. They care for their families, manage their farms, and devote themselves to producing exceptional coffee. Among them is Rosalba Cifuentes, whose vision extends far beyond her own farm. She founded a community that now brings together more than 200 women coffee producers through the Café de Mujeres initiative. By working together, these women share knowledge, support one another, and gain the recognition their dedication deserves. Coffee farming is never predictable. Every harvest brings new challenges—from changing weather conditions to fluctuating coffee prices. Yet, year after year, these women continue to cultivate their coffee with resilience, determination and pride, knowing that coffee is not only their livelihood, but also their legacy. Their mission is to create fair opportunities for these remarkable producers, helping them receive the recognition and sustainable income their coffee truly deserves. Chiapas region Chiapas is home to many of Mexico’s finest specialty coffees. Its high elevations, cool mountain nights and slow cherry maturation allow more natural sugars and complex flavour compounds to develop, resulting in a clean, sweet and beautifully balanced cup. Washed Processing In the washed process, the coffee cherry’s fruit is removed before drying. This method highlights the unique characteristics of both the origin and the variety, producing a cleaner, brighter and more refined cup. Three Classic Varieties, One Cup Typica, Bourbon and Caturra are among the world’s most celebrated Arabica varieties. Together, they create a harmonious cup with elegant sweetness, vibrant acidity and remarkable flavour complexity. Coffee Grown at 1,650 Metres At higher elevations, coffee cherries ripen more slowly. This extended maturation allows the beans to develop greater sweetness, more complex flavours and exceptional clarity in the cup.
