A semi-hard vegetarian goat's cheese washed in brine Rachel is a made by the White Lake Dairy in Somerset, using unpasteurised goat's milk and vegetarian rennet. It has a delicate, more-ish sweet/medium flavour. It is semi-hard and the rind is washed in brine. It won a Silver Award at the Global Cheese Awards in 2023.
