Spain has a storied tradition of washed rind sheep's milk cheeses (think Queso de La Serena), but don't forget about the ones from Wisconsin! At Blakesville Creamery, cheesemaker Veronica Pedraza pays homage to this tradition with Piedras, a semi-firm washed sheep's milk wheel. It's rich and sweet from the sheep's milk, and yeasty and fruity from the wash. Pairs perfectly with late summer stone fruit and a crisp, refreshing white wine.
