The traditional techniques that the canneries use involve dozens of careful steps, starting at the morning shoreside auctions when scouts from the canneries purchase the most sought-after fish. The high-quality fish are run back to the canneries on ice where artisans expertly prepare and pack them in the finest olive oils and sauces.
