Plots tend to be small and typical varieties grown include Castillo, Colombia, Caturra, Typica, Bourbon and Tabi. The EA process takes fermented molasses derived from sugarcane to create ethanol, which is then combined with acetic acid to form ethyl acetate (EA), the organic compound used to decaffeinate coffee beans. Green beans are steamed to elevate moisture content and induce swelling, which helps to facilitate the extraction of caffeine. Beans are then washed with EA to dissolve the remaining caffeine. EA is a colorless liquid with a sweet and fruity aroma that is generally considered pleasant. Despite the name, sugar is not included in the finished product. Sugarcane is a plentiful resource in Colombia and is also found in wine, beer, fruit, vegetables and other foods and beverages.
