Blend 60% Cabernet Sauvignon / 37% Merlot / 2% Malbec/ 1% Cabernet Franc Tasting Note Lead by Cabernet Sauvignon and softened by Merlot, this wine is accompanied by hints of ripe raspberry, plum, and subtle oak aromas. The tannins are balanced, leading to a lingering finish. Food Pairing Perfect with hearty tomato-braised lamb shank or a roast beef casserole with vegetables and warm cornbread. Winemaker Heidi Dietstein Winemaking The grapes were harvested at optimal ripeness and then destemmed and crushed in the cellar. Fermentation took place in stainless-steel tanks for 7-10 days, with daily pump-overs to extract optimal tannin, colour, and flavour. The Cabernet Sauvignon was aged in French oak barrels, while the Merlot, Malbec and Cabernet Franc matured in stainless steel with American oak staves, introducing subtle vanilla notes. After a six-month maturation in stainless steel to balance the blend, the wine was then prepared for bottling. Learn more here.
