Frozen Spring White Truffle (Borchii / Bianchetto) (Copy)
Local Australian Tuber Borchii (Bianchetto) or Spring White Truffles. FROZEN for innoculant. Not to be mistaken for a “White Truffle or Alba” this is a species of edible truffle RELATED to the more famous Tuber magnatum (Italian white truffle). Borchii works shaved raw over pasta, risotto, eggs, or meat and also beautifully with butter, cream, and mild cheeses, as its aroma infuses fat-based dishes well. Borchii truffles have a pleasant nutty, slightly musky, very garlicky and sometimes “cheesy” aroma and come in many shades of brown, yellow, cream, brown, black. (I’ve even seen them in shades of pink. )
