Houken Shuzo brewed Ryoka with one specific goal in mind: to change that. Founded in 1872 in Kure City, Hiroshima, Houken is built on one of the most distinctive natural advantages in Japanese sake — a spring of ultra-soft water from Mt. Noro that rises directly beneath the brewery, yielding around 20,000 litres per day. Brewing with soft water is technically demanding; when done well, it produces sake of unusual delicacy and smoothness. Houken has spent over 150 years doing it well. Ryoka is the brewery's summer limited release, brewed entirely from Hattan Nishiki — Hiroshima's own sake rice — milled to 55%. The brewing directive is deliberately stated: do not thin the flavour just to make it easy to drink. At SMV +8, this is a dry sake, but one with real substance behind it. The Hattan Nishiki umami holds the structure, and the soft water keeps it clean. On the nose: restrained, with a cool citrus note that doesn't announce itself too loudly. On the palate: smooth entry, a steady mid-palate of rice character, then a sharp, clean finish that disappears without lingering. The kind of finish that makes you reach for the next pour without thinking.
