What is Genso Wakame? Genso Wakame (原藻わかめ) is wakame in its original whole form — the leaf, stem, and mekabu (root cluster) intact, salted at harvest with no drying or further processing. Unlike the bright green wakame found in most stores (which has been blanched and dehydrated), Genso Wakame keeps its raw brown color and a thicker, snappier texture with the salt-marine scent of the coast. Sanriku, off the northeast coast of Honshu, is one of Japan's most known regions for wakame — its waters produce a leaf with a clear marine aroma and a firm bite. When briefly blanched in hot water, the brown color shifts to bright green, signaling it's ready to eat.
