Kinako — roasted soybean flour, toasty and faintly sweet — is folded through our naturally leavened dough alongside whole red beans, slow-fermented with our own wild starter for depth and a gentle tang. The kinako works its way into every layer of the crumb, warm and nutty, while the red beans hold their shape through the bake, giving each slice a soft, earthy sweetness.
