Ponderossa Lemon Marmalade

The Ponderosa lemon is a curious heirloom citrus, producing enormous fruit with a bright, fragrant flavor that bridges the gap between a lemon and a citron. We start with fresh Ponderosa lemons, carefully preparing the peel and fruit before slowly cooking them into a traditional marmalade with pure cane sugar. To complement the vibrant citrus notes, we've added delicate calendula petals throughout the marmalade. Often called "the poor man's saffron," calendula contributes a subtle floral character and a beautiful golden appearance that makes every jar feel like a little bit of sunshine. Bright, aromatic, and pleasantly bittersweet, this marmalade is equally at home spread over warm toast, paired with soft cheeses, or spooned into tea for an extra burst of citrus flavor.
