Ko Santoku knife, VG1, Tsuchime finish - Masutani
A fantastic all-rounder with the performance of Japanese steel. SHAPE: Ko (small) Santoku. A good all-round, all purpose kitchen knife. Like a santoku but smaller. STEEL: VG1. Another of the V gold series of stainless steel knives manufactured by Takefu steel. This one has a lower Carbon and alloying elements content than its siblings. This generally makes it easier to sharpen but with slightly lower edge retention. FINISH: Tsuchime. This is a hand hammered finish that is not only beautiful but also functional. The small depressions stop food sticking to the knife. This finishes comes in many different forms from the traditional round hammer marks to more modern patterns.
