Whole Fillet of Beef (can include tail and head of fillet)

The leanest, most tender cut on the animal. Fillet comes from the muscle that does the least work, which is exactly why it's so prized: fine-grained, meltingly soft, and with a delicate flavour that doesn't need much doing to it. We hand-cut ours in the Richmond shop from beef supplied by our farm. It's the cut for special occasions, whether that's a whole roasting fillet for a dinner party centrepiece or steaks cut thick for the grill or pan. Because it's so lean, it cooks quickly and is best served rare to medium, so it stays tender rather than tough.
