Manos Juntas, ethically focused, pays its farmers a fixed above market rate. On arrival, cherry's Brix & pH is measured. For 5 days, nitrogen catalyses yeast activity in an anaerobic fermentation which is halted via cooling to 20°C at target Brix / pH. Barrel aging follows for 5 days, solar drying for 35-40, and de-pulping is just prior to export.
