Black Beans — Frijol Negro
From Ixtenco, Tlaxcala, grown by five families — Cajero Cervantes, Angoa García, Angoa & González, Angoa Domínguez and Hernández Vargas — each keeping their own seed of the same negro landrace. Sown in spring, harvested in autumn, grown on rainfall alone. Toasted and pleasantly bitter, with a sweet-greens undertone. A medium broth and an everyday bean in the best sense: frijoles de olla with nopales and epazote, refritos, frijoles with cilantro, tlacoyos finished with hoja de aguacate. Negro landrace · 22.3% protein · medium broth Ixtenco, Tlaxcala · 100% rainfed · 1 lb
