During that second fermentation, the coffee's own fruit juices are reintroduced, a closed-loop process that enhances flavour naturally rather than relying on anything added. After washing, the coffee is gently dried before being decaffeinated using the sugar cane process, chosen for its ability to preserve the coffee's vibrant character while removing the caffeine.
