This washed Papayo comes from Finca El Paraíso in Cauca, Colombia, where it is grown at 1,960 masl. The Bermudez brothers work with carefully selected ripe cherries, combining low-temperature anaerobic fermentation with a thermal-shock wash, a controlled process built around preserving the variety’s delicate aromatic character. Papaya, mango blossom, and jasmine lead the aroma, followed by mandarin, ripe papaya, and fruit tea in the cup. Bright, tropical acidity brings energy to a medium, silky body, while the finish remains sweet, floral, and persistent.
